Ingredients#

Directions#

  1. Preheat oven to 260 degrees Celsius.

  2. Heat oil in a large pot. 

  3. Add onion, carrot, beef and garlic to pot and cook over high heat, mixing and breaking apart regularly. 

  4. Cook until the liquid from mince has evaporated.

  5. Dissolve gravy powder in water and add to beef.

  6. Add tomatoes, corn, vinegar, cumin, paprika, salt and sugar and bring to a boil stirring regularly.

  7. Drain and rinse kidney beans, then add to beef mixture in pot. Bring back to the boil.

  8. Once boiling and thickened, reduce heat and keep hot until ready to serve. 

  9. Place fries on roasting trays.

  10. Cook in oven for approximately 30 minutes or until golden brown and cooked through.

  11. Remove from oven, cover with foil and keep warm until ready to serve.

  12. Shred lettuce.

  13. Serve chilli mince and beans with fries, lettuce, grated carrot, sour cream and cheese as per guidance below.

Portioning guidance

Portion out a reference plate for each meal size to guide your portioning.

  • Years 0 to 3: 74g chilli mince, 82g fries, 13g lettuce, 13g carrot, 7g sour cream, 10g cheese.
  • Years 4 to 8: 98g chilli mince, 107g fries, 17g lettuce, 17g carrot, 10g sour cream, 13g cheese. 
  • Years 9 and above: 123g chilli mince, 136g fries, 21g lettuce, 21g carrot, 12g sour cream, 16g cheese.
     

Special diet substitution ideas#

  • Vegetarian: omit beef and increase quantity of kidney beans. 
  • Vegan: omit beef and increase quantity of kidney beans. Use dairy-free gravy powder. Use dairy-free cheese. Omit sour cream and serve slightly more beans. 
  • Gluten-free: use gluten-free gravy powder. 
  • Dairy-free: use dairy-free gravy powder. Use dairy-free cheese. Omit sour cream and serve slightly more beans. 
  • Halal: use certified halal beef and cheese, gelatine-free sour cream.  
Tip

Recipe tips

  • For a more affordable option, serve with rice instead of chips.
  • To serve without salad, increase quantities of onion, carrot and corn in the chilli beef.
  • For each 3.5kg bag of frozen fries use 2 size 1 Gastronorm trays. 
  • Cooking times for the chips may vary depending on how many trays are in the oven at once. More trays may result in a longer cooking time.
